The B.A.T (Bacon. Avocado. Tomato) Sandwich

I hope one day I can open a cute little vegan cafe and serve sandwiches just like this one (only with home-made veg bacon instead of store-bought). This sandwich is so simple to make and honestly was one of the best sandwiches I’ve had in a while.

I used Light Life’s vegan bacon (which does contain soy and gluten for those who stay away from those products). Lightlife products in general are great (I love their mexican taco crumbles, ground ‘meat’ and pepperoni too). I try to stay away from processed vegan products as much as possible but I do add some of these in occasionally when I make BLT’s, tacos or a good home-made pizza but I try to not rely on them on a regular basis. Lightlife is sold at most grocery stores in refrigerator section. (And no I do not work for or represent them ha, just my honest opinion).

To make 1 sandwich:

  • 2 slices of your favorite multigrain bread, toasted
  • 5 pieces of Light Life Smart Bacon 
  • 1/2 avocado, sliced
  • 2 thick slices of tomato
  • 1 Tbsp vegenaise (I use their soy-free version)

Toast bread. In a skillet, cook bacon on medium heat with a little bit of cooking oil (or nonstick cooking spray) for a few minutes, flipping occasionally. If you don’t want to use the stove or oven, you can microwave them for 90 seconds too (even though it doesn’t say that on the package).

Top toasted bread with vegenaise, sliced tomato, avocado and bacon. Enjoy!
