Broccoli, Pea and Avocado Pasta Salad

This pasta salad is a wonderful side dish. It’s really tasty, gluten and soy-free.

Makes 6- 8 servings

What You’ll Need:

  • 4 cups gluten-free rotini pasta
  • 3 cups fresh chopped broccoli florets
  • 2 cups frozen peas (thawed)
  • 4 tbsp capers
  • 1/2 cup soy-free veganaise
  • 1 avocado
  • 1 lemon
  • 1 tsp dried dill
  • 1/2 tsp dried garlic powder
  • A few shakes of salt and pepper, to taste

To make:

Cook gluten-free pasta per the package instructions. Strain and put into a ceramic bowl. Add 2 cups frozen peas to the bowl with the hot pasta and toss them a few times (the peas will thaw from the pasta’s heat and help cool the pasta). Let the bowl sit for 15 minutes to cool.

Chop broccoli florets into quarters and add to the bowl.

Put 1/2 cup soy-free veganaise, 1 avocado and the juice from 1 lemon in a small mixing bowl. Mash the avocado and stir it with a spoon until it makes a smooth dressing consistency. Add 1 tsp dill, 1/2 tsp dried garlic powder, capers and a few shakes of salt and pepper to the dressing and stir.

Add dressing to pasta salad bowl and toss to mix it in thoroughly. Put the pasta salad in the refrigerator to cool it for 15- 30 minutes. Enjoy!
