Pesto, Tomato & Mozzarella Hot Sandwich

Today I made a quick lunch for my boyfriend and our buddy Tom and they kept raving about how amazing this sandwich was (not going to lie, it was SO good and so easy to make!) They’re also huge meat-eaters and couldn’t believe this was vegan because it was THAT delicious. So obviously I had to share the recipe.

Makes 3 sandwiches

What You’ll Need:

  • 1 french baguette
  • 1 ripe heirloom tomato, sliced thinly
  • 1/2 cup walnut pesto
  • 1 cup Daiya mozzarella shreds

To Make:

Preheat your oven to 400 degrees.

Slice the fresh baguette down the middle and spread it open on a cookie sheet. Spread 1/4 cup pesto evenly on both sides.

Top one half with Daiya mozzarella shreds and the other half with sliced tomatoes.

Bake in the oven open faced for 15 minutes. Remove from oven, put the top on the bottom, slice and serve.
