Vanilla Chia-Nut Granola Cereal

The other day I thought to myself “gluten-free cereals are so expensive!” That and “why are there so many ingredients in this stuff?” I hate not knowing if my food has GMO’s and extra additives because the ingredient list reads like a mini novel. So I made my own cereal this morning and it is really, really good. This granola cereal reminds me of those “vanilla nut cluster crunch” type cereals I used to love when I was little, only this one has less than 10 ingredients, it’s healthier and it has a nice dose of protein and fiber 🙂

Makes: 8 servings (approx 1/2 cup each)

What You’ll Need:

  • 3 cups oats
  • 1/2 cup walnuts
  • 1/2 cup almonds
  • 1/4 cup chia seeds
  • 3 tbsp grape seed oil
  • 3 tbsp pure maple syrup
  • 1 tbsp brown sugar
  • 1 tsp vanilla extract
  • A dash of salt
  • Coconut cooking oil spray (a few sprays)

To Make:

Pre-heat oven to 400 degrees.

In a mixing bowl, combine oats, walnuts, almonds and chia seeds. In a separate small mixing bowl, combine grape seed oil, maple syrup, vanilla and a few dashes of salt.

Pour the mixture into the mixing bowl and toss all ingredients with a spoon. Add a few sprays of coconut cooking oil spray and the brown sugar and continue to toss until the ingredients are mixed evenly.

Pour mixture into two glass casserole dishes and spread evenly on the bottom (there should be a thin layer of granola cereal in each one). Bake for 30 minutes total but every 10 minutes toss the granola with a wooden spoon to avoid burning. Remove from oven.

Serve with fresh sliced berries and your favorite non-dairy milk or yogurt! We use unsweetened vanilla almond milk in our household 🙂
