Hummus & Veggie Sandwich Lunch Box

Head to your local farmer’s market, co-op, bakery or grocery store and pick out a loaf of your favorite whole grain bread (or make your own!) For me this week it was a garlic and herb organic whole grain round loaf from the farmer’s market that is the size of my face. Use your new fresh-baked bread to make a delicious fresh vegetable sandwich 🙂

What You’ll Need:

  • 2 slices of your favorite whole grain fresh baked bread (or 1 large slice cut into two pieces)
  • 1/3 cup hummus (I used my basic garlic hummus recipe, delicious on a sandwich!)
  • 1 organic tomato
  • 4 large lettuce leaves
  • 1 handful of broccoli sprouts
  • 1 avocado
  • 3 organic celery stalks, cut into thirds
  • 1 orange (dessert!)

To make: Pack all ingredients in your lunch box tupperware (see photo). For the fresh baked bread, I sliced my pieces and wrapped them in saran wrap. I carried my tomato, orange and avocado in a little baggie on the side.

What a plant-based lunch box looks like before…

At work: Toasting your bread is optional (if you have a toaster/toaster oven). Spread half of the hummus on both pieces of your fresh baked bread. Top each one with half a sliced avocado, 2 tomato slices, some broccoli sprouts and a two large lettuce leaves (which act as the top half of the bread and will help keep your sandwich from falling apart).

Serve with a side of celery sticks, the rest of the hummus and have an orange for dessert. So delicious 🙂 Enjoy!
