- 2 slices of your favorite whole grain fresh baked bread (or 1 large slice cut into two pieces)
- 1/3 cup hummus (I used my basic garlic hummus recipe, delicious on a sandwich!)
- 1 organic tomato
- 4 large lettuce leaves
- 1 handful of broccoli sprouts
- 1 avocado
- 3 organic celery stalks, cut into thirds
- 1 orange (dessert!)
To make: Pack all ingredients in your lunch box tupperware (see photo). For the fresh baked bread, I sliced my pieces and wrapped them in saran wrap. I carried my tomato, orange and avocado in a little baggie on the side.
At work: Toasting your bread is optional (if you have a toaster/toaster oven). Spread half of the hummus on both pieces of your fresh baked bread. Top each one with half a sliced avocado, 2 tomato slices, some broccoli sprouts and a two large lettuce leaves (which act as the top half of the bread and will help keep your sandwich from falling apart).
