Ever make coffee and realize you don’t have any non-dairy milk in your fridge or cupboard AFTER brewing your coffee? That happened to me today, however I did have some raw almonds on hand so I made this up on a whim and it turned out to be a happy accident! An almond-cinnamon latte is what came from the experiment and it was deeee-licious. So if you ever run out of non-dairy milk… before you run off to the store in your PJ’s or robe, check your cupboards for raw almonds, cinnamon and a little cane sugar and make your own instead!
Makes: 2 servings
What You’ll Need:
- 3 tbsp raw almonds
- 10 tbsp water
- Cinnamon (a few dashes, to taste)
- 1 tsp cane sugar
To Make:
(Note: If you plan to make this ahead of time, soak the almonds in the water overnight. I didn’t plan any of this so I didn’t soak the almonds but it still turned out great.)
Brew your favorite coffee however you like- I made this recipe with french press coffee.
In a magic bullet blender or food processor (or if you have neither you can try a blender), blend almonds and water on high for 1- 2 minutes, until it becomes a smooth liquid.
Strain any excess almond residue into a cheese cloth or mesh strainer over your blender. Add a few dashes of cinnamon and 1 tsp organic cane sugar. Blend for another 30 seconds.
Pour coffee into two coffee mugs. Top with the almond milk mixture and stir in with a spoon. Enjoy!
PS: If you love sugar in your coffee, feel free to add more. I made this so it wasn’t super sweet.
