Quick story: I have been working so much at the office (day, night, all weekends) that I haven’t cooked one meal for myself in two weeks straight. Instead of my normal healthy meals, I was drinking large almond and soy milk lattes like it was my job and eating meals packed with preservatives, soy, wheat and not enough fruits and veggies. The result?
I gained 5 pounds, my brain was foggy, my body ached and my skin broke out. Now I’m not one to really care about my weight (been there, done that- I don’t use a scale anymore) however I do take pride in feeling my best and having lots of energy. We hit our project deadline on Monday (yay!) so now I’m taking the next 5 days off to relax and unwind. The first thing I did? Hit up my local farmer’s market and Whole Foods (twice) so I can start cooking my own meals once again. Health and beauty starts in the kitchen and you are what you eat. I know that after how I felt eating crap the past two weeks…
This smoothie is packed with so many nutrients. The thing I like most about it is that it has no non-dairy milk what-so-ever… it’s simply organic fruits and vegetables, water and ice- yet it tastes subtly sweet and delicious! I call it the green cooler because the cucumber and apple give it a nice, cool refreshing taste.
Makes: One 48 oz serving (I drank all of this in one serving… the entire batch only has around 310 calories, so feel free to drink all of it or split it into two 24-ounce servings as an energizing snack)
What You’ll Need:
- 1 banana
- 1/2 organic cucumber, peeled
- 1 small organic apple
- 1 cup frozen mango chunks
- 3 cups raw spinach
- 16 oz cold water
- 6 ice cubes
To Make:
Fill your blender with 16 oz ice water, the banana, mango chunks, 1/2 cucumber (peeled) and apple (remove core and seeds, if you don’t like pulp also remove the skin but I left mine on for extra fiber- it’s good!). Blend for 45 seconds. Add 3 cups raw spinach and 6 ice cubes. Continue to blend for another 45- 60 seconds. Enjoy!
