How To Cook Beets

For years, I purchased pre-cooked beets for my salads at the grocery store. Then one day I started cooking my own beets and I’ve never looked back! Cooking them yourself will save you money and toxins (because when you buy them, they usually come with preservatives in a can or plastic container). I can’t believe how easy these are to make. Store them in your refrigerator and top them on all of your favorite salads!

What You’ll Need:

  • Beets! I used 3 but use as many as you’d like that fill your cooking pot under the water level.
  • 3 tbsp apple cider vinegar (If you hate the smell of apple cider vinegar, you can also use 3 tbsp lemon juice)
  • 8 cups water

To Make:
Trim the stems off the beets using kitchen scissors or a knife. Boil 8 cups water with 3 tbsp apple cider vinegar in a large cooking pot.

ImageImageOnce boiling, lower to a simmer and add beets to water with their skin on. Cook for 50 minutes uncovered. Remove beets from the water. Empty the water in the pot and fill it with cold water. Put beets in for a minute to cool them down. Then run them under cold water in your faucet for a few seconds to remove any excess vinegar water on the skin. Remove from water and gently remove the thin layer of skin on the beets using a knife. Enjoy!

    I have always tried roasting them – but they never get completely soft! Definitely will try this method next time.

      These were perfectly soft, I threw them in a salad with some kale, quinoa and other good stuff and they were delicious. Hope you enjoy!!
