Yesterday my friend Jenny came over for lunch and she made me this fruit salad that was so yummy I had to share, so I’m calling her my guest chef today on the blog 😉 This delicious and light fruit dish is perfect as a side or healthy dessert this summer. Feel free to swap out the fruits with any other favorite fruits you have that are in season. Jenny picked out the colors based on the rainbow.
Also for our lunch, I made a coconut curry vegetable noodle bowl and it was really good- that recipe will be up in the next day also.
Makes: 6- 8 servings
What You’ll Need:
Slice all of the fruit and throw it into a big bowl. Squeeze the juice from the lemon onto the bowl, add 2 tbsp raw coconut flakes and toss the fruit. So easy, right?! This fruit salad is best eaten when prepared so if you plan to store it for a day- cut the banana on fresh instead of tossing it in to avoid browning.
