Fruit & Mint Salad


This beautiful fruit salad makes a lovely dessert, snack or breakfast side dish. It is light, healthy and refreshing on a hot summer day plus it’s packed with lots of energy-boosting vitamins and minerals to keep you going. All ingredients are fresh at the local farmer’s market now, so enjoy them while they’re in season!

Makes: 1 serving (but feel free to multiply the ingredients and make more!)

Note: For best results, chill your fruits in the refrigerator before preparing to really cool you down. Just make sure the peach and plum are ripe before chilling so they’re not hard in your salad.

What You’ll Need:

  • 8 organic strawberries, stems removed
  • 1 peach
  • 1 plum
  • 1/2 lemon (juice)
  • 3 fresh mint leaves

To Make:
Remove stems and cut strawberries in half. Slice peach and plum into thin slices, removing the cores. Toss all ingredients into a bowl and top with the juice from half a lemon (no seeds). Chiffonade the mint leaves and sprinkle them on top of the fruit salad for presentation (and eat them with the fruit!)

      Thanks Derek! It’s tough buying organic because of the price but I tend to find great deals at my locals farmer’s market- thank goodness for those.

      Hopefully one of these days good, organic food will become cheaper and the GMO crap will go away… (wishful thinking, right?)
