Who wants dessert for breakfast? This oatmeal tastes just like dessert- with healthy wholesome ingredients like strawberries, pistachios, chia seeds and oats and some added sweetness with the coconut flakes, coconut milk & coconut nectar.
Makes: 2 servings
What You’ll Need:
- 1 cup of oats (choose your favorite type)
- 2 cups vanilla coconut milk beverage
- 1 cup fresh strawberries
- 2 Tbsp pistachio nuts (removed from shells)
- 1 tsp chia seeds
- 2 tsp coconut flakes
- 2 tsp coconut oil
- 2 tsp coconut nectar (optional, if you don’t like added sweetness leave out the coconut nectar)
- 1 tsp cane sugar
To Make:
Cook your oatmeal according to the package instructions using the vanilla coconut milk beverage instead of water. I say ‘cook according to package instructions’ because everyone has their favorite type of oatmeal: instant, quick oats, steel cut, Irish oatmeal, etc. So use your favorite.
In a small frying pan, heat coconut oil over medium heat. Rinse and remove stems on strawberries, then chop them into smaller pieces and add to your frying pan. Add chopped strawberries and 1 tsp cane sugar to your pan and sauté the strawberries for 5 minutes, about how long it’ll take for them to caramelize.
Pour your cooked oatmeal into bowls. Top each with half of the strawberry mixture, 1/2 tsp chia seeds, 1 Tbsp pistachio nuts and 1 tsp coconut flakes. Drizzle 1 tsp coconut nectar on top. Enjoy!
