This was super yummy & only about $5 for the entire meal per person (at a restaurant you would pay double that). Plus the sweet potatoes, avocado & lettuce are all in season! Yum, yum, yum. I wanted to share this because it was so delicious and easy to make.
Side note: I picked up a different brand of vegan seitan bacon by Sweet Earth today at Whole Foods and it was delicious! I love supporting plant-based brands plus they’re located here in California (woo-hoo!)
For the BLT Wrap, you will need:
- A whole grain or gluten-free tortilla (I love the Ezekiel brand sprouted tortillas)
- 2- 3 slices of vegan bacon (I used Sweet Earth vegan bacon)
- Tomato, sliced
- A handful of baby romaine lettuce
- 1/2 ripe avocado
- 1 Tbsp veganaise
Cook your vegan bacon according to the package details (I prefer to heat it over medium heat in a frying pan for a few minutes on each side). Next, heat your tortilla and top with veganaise, cooked vegan bacon, lettuce, tomato & avocado. Wrap, slice & enjoy! Even my meat-eating boyfriend was wowed by this meal.
