I just made these sandwiches for me and my boyfriend and they were so good I thought I’d share. This one is more of an idea than a recipe- I bought all of the ingredients at the farmer’s market in Santa Monica (minus the vegan mozzarella) but you can buy these same ingredients are your local grocery store if you don’t have a farmer’s market nearby.
What You’ll Need:
- A really delicious fresh-baked bread or fresh-baked sandwich rolls. I used sundried tomato sourdough sandwich rolls from the farmer’s market (Bezian Bakery)
- Pesto! I used a raw habanero pesto from the farmer’s market (Basiltops)
- Yellow tomatoes
- Vegan mozzarella (I love Daiya brand)
- A few dashes each of dried red pepper flakes, garlic powder, dried basil, salt & nutritional yeast
To Make:
Slice bread into halves and top with pesto, daiya, tomato slices and seasonings. Bake at 400 degrees for 20 minutes on a cookie sheet. Enjoy! 🙂
