‘Just Peachy’ Grilled Cheeze

This sandwich was just peachy (literally). I had it for dinner but could easily eat this for breakfast too + it’s really simple to make. Peaches are in season so stock up and eat them while you can. I love to snack on a beautiful, ripe peach but they’re also great to cook with! Just make sure you buy organic or pesticide-free since peaches are on the dirty dozen and contain some of the most pesticides. I purchase mine at my local farmer’s market and talk to the farmer’s directly- sometimes they aren’t a certified organic farm, however they do not use any pesticides.

Rainbow Coconut Fruit Salad

Yesterday my friend Jenny came over for lunch and she made me this fruit salad that was so yummy I had to share, so I’m calling her my guest chef today on the blog 😉 This delicious and light fruit dish is perfect as a side or healthy dessert this summer. Feel free to swap out the fruits with any other favorite fruits you have that are in season. Jenny picked out the colors based on the rainbow.

Creamy Kale Salad

I love weekends because I can shop at the Farmer’s market on Saturday morning and then spend the next two days cooking everything my heart desires. Today’s lunch has kale, sweet yams, lemon and tomatoes all from the Farmer’s market and straight onto my lunch plate. I made my new Firehouse Spicy Baked Yam Fries (these are for for people who like a little kick in their food, recipe will be posted in the next day) and a delicious Creamy Kale Salad to go with them (see below). Light Mock “Tuna” Salad Sandwich

This is the lighter version of the mock tuna salad. While I don’t typically count calories, this sandwich only has 295 calories  so it’s perfect to pair with a vegetable soup or another side dish. It also makes a great snack spread onto crackers. It’s soy and gluten-free too for all of those with food allergies/intolerances. I will be posting a heartier version in the coming weeks for a tuna melt and also a nicoise salad 🙂
