Do you love a good grilled cheese sandwich? This one was super delicious,plus it’s gluten, dairy and soy-free. Bonus: the bread is seasoned like garlic bread.
I bought a package of brown-rice tortillas and spontaneously decided that my goal is to make a different type of quesadilla with each one over the next few days- thus Quesadilla Fest 2014 has begun! First up: Macho Quesadillas. Or as I also refer to them as: Macho Quesadilla Explosion. This was seriously SO delicious and while it looks horribly unhealthy- it’s really not THAT bad (only 465 calories for the whole thing!) Added bonus: it’s gluten-free with the brown rice tortillas.
Today I made a quick lunch for my boyfriend and our buddy Tom and they kept raving about how amazing this sandwich was (not going to lie, it was SO good and so easy to make!) They’re also huge meat-eaters and couldn’t believe this was vegan because it was THAT delicious. So obviously I had to share the recipe.
I love me some breakfast burritos, but they’re usually made with tofu and fake bacon and I’m trying to cut back on the soy. This one is healthy and soy-free, made with quinoa, black beans, spinach, tomatoes, a little vegan cheese (optional) and a home-made chili paste.
I hope one day I can open a cute little vegan cafe and serve sandwiches just like this one (only with home-made veg bacon instead of store-bought). This sandwich is so simple to make and honestly was one of the best sandwiches I’ve had in a while.
