I am so excited to be back in my kitchen! I have been on the road for the past three weeks for work in New York City and then vacation to Europe (more on that in another post) and the one thing I couldn’t wait to do when I returned home was to cook. So much so that I woke up at 7AM this morning and went straight to Whole Foods (jet lag was partially to blame for this…) For lunch today I made myself a Spicy Soul Bowl and it was definitely spicy but really really good if you like a kick to your food.
I made a smaller serving of this pasta salad because it has fresh ingredients so it wont last more than 1- 2 days in the fridge. This makes a great lunch, or make a bigger batch and bring it to a potluck this summer!

I love weekends because I can shop at the Farmer’s market on Saturday morning and then spend the next two days cooking everything my heart desires. Today’s lunch has kale, sweet yams, lemon and tomatoes all from the Farmer’s market and straight onto my lunch plate. I made my new Firehouse Spicy Baked Yam Fries (these are for for people who like a little kick in their food, recipe will be posted in the next day) and a delicious Creamy Kale Salad to go with them (see below). A lovely, rainbow lunch box! No shortage of good-for-you vitamins, minerals, protein and fiber in this box. It’s gluten, soy-free and can be made raw (see notes on ingredients). The cost for this lunchbox is approximately $5.50- however I used organic sprouted hummus and organic blue corn tortilla chips from Whole Foods… if you shop at Trader Joe’s or make your own, I bet you can get the cost down to $4.
