Strawberry-Banana Slushie

It’s a beautiful November day here in Southern California so I whipped up this slushie to energize me for cooking all day (and cool down, it’s hot out today!) It’s super easy to make- only 3 ingredients! But it was really delicious so I figured I’d post it 😉 Strawberries are going out of season but I bought some 3-packs at the farmer’s market recently, de-stemmed and froze them for smoothies.

Autumn Vegetable & Chickpea Curry Stew

I bought all of this fresh produce yesterday at the farmer’s market for only $30 bucks. Who says eating healthy, organic food has to be expensive? This food will make a LOT of meals for myself and my boyfriend this week. First up? This lovely Autumn Vegetable & Chickpea Curry Stew. It’s really delicious and a little spicy with a beautiful aroma (it’s more of an indian curry). It makes a big pot full of stew so you can make it on a Sunday and re-heat throughout the week. Bon Appetite!

Sweet Green Smoothie

(Recipe updated Oct 8, 2014: I made this again this morning but swapped the fruit for apples (in season) and frozen pineapple- it was even better!)

This makes a very large, delicious green smoothie (I split it with my boyfriend in two 32-ounce mason jars).

Strawberry & Blueberry Cobbler Pie

One of my favorite things to do is cook for other people. Whether it’s cooking a delicious meal for friends, family & co-workers, bringing a jar of fresh salsa as a hostess gift to a BBQ or baking sweets that’ll make someone smile. Last Friday a friend of mine helped me out with a project and I promised him a pie as a thank you, then asked him what flavor he wanted. He said he loved berry cobbler which is what inspired this recipe. You may notice in the photos I made two… one was for my friend and one was for my co-workers (I simply doubled the ingredients to make an extra to bring to work.)

Green Cooler Smoothie

Quick story: I have been working so much at the office (day, night, all weekends) that I haven’t cooked one meal for myself in two weeks straight. Instead of my normal healthy meals, I was drinking large almond and soy milk lattes like it was my job and eating meals packed with preservatives, soy, wheat and not enough fruits and veggies. The result?

Fresh Almond + Cinnamon Latte

Ever make coffee and realize you don’t have any non-dairy milk in your fridge or cupboard AFTER brewing your coffee? That happened to me today, however I did have some raw almonds on hand so I made this up on a whim and it turned out to be a happy accident! An almond-cinnamon latte is what came from the experiment and it was deeee-licious. So if you ever run out of non-dairy milk… before you run off to the store in your PJ’s or robe, check your cupboards for raw almonds, cinnamon and a little cane sugar and make your own instead!

Hummus & Veggie Sandwich Lunch Box

Head to your local farmer’s market, co-op, bakery or grocery store and pick out a loaf of your favorite whole grain bread (or make your own!) For me this week it was a garlic and herb organic whole grain round loaf from the farmer’s market that is the size of my face. Use your new fresh-baked bread to make a delicious fresh vegetable sandwich 🙂
