This dish was so simple and lovely. The hardest part about making it was trying to not eat the ingredients as I put it together! Make it as a lunch for yourself, or serve it as an appetizer with a meal.

I love weekends because I can shop at the Farmer’s market on Saturday morning and then spend the next two days cooking everything my heart desires. Today’s lunch has kale, sweet yams, lemon and tomatoes all from the Farmer’s market and straight onto my lunch plate. I used to love tuna nicoise salads, and this is a wonderful alternative. If you prepare the mock tuna, potatoes and dressing on a Sunday and store in glass or tupperware, you can bring this to work for lunches.
