Here are a few yummy vegetables that you can find at your local farmer’s market this fall: sweet potatoes, bell peppers and onions! This morning I made a delicious baked breakfast hash using these three ingredients along with a few spices and condiments.
Purple potatoes are beautiful and the deep-hue makes them a unique side dish to any entree or breakfast. The lovely thing about these tots is that the purple potato packs far more antioxidants than their yellow and red counterparts so pick some up next time you’re buying potatoes. I bought mine at my local farmer’s market out here in California (they’re in season!)
I had a few ripened bananas in my fruit basket so I decided to make these heathy & delicious Oatmeal Raisin Cinnamon Banana-Nut Muffins for the week with what I had in my kitchen. They’re gluten and soy-free plus there’s nothing artificial in them! Just oats, fruits, nuts, spices and maple syrup (that was tapped from my grandfathers maple tree in Michigan.) They’re perfect for a light breakfast, snacks or accompanying a bowl of soup or salad with your dinner.
Yesterday my friend Jenny came over for lunch and she made me this fruit salad that was so yummy I had to share, so I’m calling her my guest chef today on the blog 😉 This delicious and light fruit dish is perfect as a side or healthy dessert this summer.
