Roasted Purple Potato Slices

Purple potatoes are beautiful and the deep-hue makes them a unique side dish to any entree or breakfast. The lovely thing about these tots is that the purple potato packs far more antioxidants than their yellow and red counterparts so pick some up next time you’re buying potatoes. I bought mine at my local farmer’s market out here in California (they’re in season!)

Creamy Mediterranean Pasta Salad

I made a smaller serving of this pasta salad because it has fresh ingredients so it wont last more than 1- 2 days in the fridge. This makes a great lunch, or make a bigger batch and bring it to a potluck this summer!

How To Cook Beets

For years, I purchased pre-cooked beets for my salads at the grocery store. Then one day I started cooking my own beets and I’ve never looked back! Cooking them yourself will save you money and toxins (because when you buy them, they usually come with preservatives in a can or plastic container). I can’t believe how easy these are to make. Store them in your refrigerator and top them on all of your favorite salads!

Fresh Pico De Gallo Salsa

This salsa is wonderful as a dip with tortilla chips, on tacos or on a salad. It’s raw, light and refreshing with a little kick from the jalapeño. Tip: After I made the salsa, I put some in a mason jar and brought it as a little hostess gift for a party. Just an idea 🙂
