I have been feeling dehydrated lately, so on a break from work I stopped by home really quick and made this delicious fruit smoothie packed with electrolytes. All four ingredients in this smoothie contain potassium + the coconut water is filled with sodium, magnesium & phosphorus too.

Pumpkin-Apple Oat Muffins


I woke up today thinking “I want to make a bunch of pumpkin flavored recipes…” so I went out to Whole Foods, bought some organic pumpkin puree and got to work. These were the first of my pumpkin experiments and they turned out really fluffy, moist & delicious– despite the fact that they’re gluten-free and vegan (sometimes gluten-free baking turns out like a brick). I added apples to the muffins to add an extra sweetness- they’re at the peak of their season right now and absolutely delicious so head to your local farmer’s market, co-op or grocery store and stock up.

Sweet Potato Breakfast Hash


Here are a few yummy vegetables that you can find at your local farmer’s market this fall: sweet potatoes, bell peppers and onions! This morning I made a delicious baked breakfast hash using these three ingredients along with a few spices and condiments.

Sweet Green Smoothie


(Recipe updated Oct 8, 2014: I made this again this morning but swapped the fruit for apples (in season) and frozen pineapple- it was even better!)

This makes a very large, delicious green smoothie (I split it with my boyfriend in two 32-ounce mason jars).

Make Your Own Bottled Tea

I used to drink bottled tea like it was no one’s business (peach-oolong was my jam). And then I realized how much money I was spending on water (a free resource), tea leaves and a bottle. It also bums me out everytime I see aisles of pre-bottled tea, and then walk past a trash can filled with empty bottles. Those landfills aren’t going to empty themselves…
