Toasted Coconut Muesli Cereal


This breakfast muesli is healthy, delicious & easy to make. The best part of all is that it’s a cheap breakfast- just visit the bulk bin section of your local grocery store for organic oats, nuts and coconut flakes and use pantry-staples like maple syrup, brown sugar and coconut oil to seal the deal. Pair with your favorite non-dairy yogurt or milk and some fruit for a perfect meal. Pictured in this recipe is vanilla coconut milk yogurt with fresh chopped cherries, but I won’t lie my absolute favorite way to eat this cereal is with sliced banana and vanilla rice milk. No matter how you serve it- it’s delicious 🙂

Vanilla Chia-Nut Granola Cereal

The other day I thought to myself “gluten-free cereals are so expensive!” That and “why are there so many ingredients in this stuff?” I hate not knowing if my food has GMO’s and extra additives because the ingredient list reads like a mini novel. So I made my own cereal this morning and it is really, really good. This granola cereal reminds me of those “vanilla nut cluster crunch” type cereals I used to love when I was little, only this one has less than 10 ingredients, it’s healthier and it has a nice dose of protein and fiber 🙂

Blueberry Cinnamon Oatmeal Pancakes (GF / SF)

We were craving pancakes on this lovely Sunday morning, so I whipped up a recipe on a whim that turned out really yummy. I asked my boyfriend for a “review” and he said they were “light but still sweet with some texture. They were scrumptious“. Yep- he said scrumptious. The maple syrup topped them off perfectly.
